This is a simple recipe that may mean more to me (Margaret's grandson) than anyone else. As Mommom got older, she picked recipes that were easier to prepare and this one she could do in her toaster oven. I really liked it so she made it often for me. You won't taste all the memories I do when I eat it but it still makes a good main course to a meal.

Mommom used to insist on Perdue chicken but you may not have that in your area so get the best brand you can find.

Preheat oven to 375

Take 4 chicken breasts and place them upside down on a broiling pan. Place in preheated oven for 30 minutes. Then turn over and cook for an additional 45 minutes. Sprinkle with salt and pepper (Mommom used lots of pepper)
