On January 15th, 2000, my sister and I went to Mommom's so she could show us how to make her Vegetable soup. After Mommom passed away, my sister got her soup pot and I got the ladle and we both do a good job at replicating her recipe. I'll warn you ahead of time that you'll need a large soup pot. This is good served with Mommom's short bread biscuits.

Vegetable Soup

3 to 5 Short Ribs
1 Pint of canned tomatoes
1 small onion
3/4 head of cabbage
2 stalks of celery
1 or 2 carrots
1 very small sweet potato or similar sized chunk from a larger sweet potato
5 medium potatoes
1/2 pint of frozen or canned sweet corn (preferably corn you've frozen yourself)
1 small turnip
1/2 bag of baby lima beans from a 9oz box
Dumplings (recipe at end of this page)
  • Put short ribs in a 4 quart sauce pan with about 2 and a half quarts of water and some salt. Once the water starts boiling, reduce heat to medium high and let boil for 45 minutes. Skim foam off the top and add tomatoes. Mommom squeezed the canned tomatoes to reduce them to a pulp. She said she didn't like them stringy. Maintaining a rolling boil is needed to cook the soup properly.
  • Cut up the cabbage into small pieces, discarding the hard heart of the cabbage. Cut up carrots and celery into small pieces. Cut up the sweet potato into small pieces. Cut the onion into small pieces (do you see a pattern here). Mommom said the sweet potato takes away from the acid of the tomatoes. Add these ingredients to the soup. Cover and let cook for 45 minutes.
  • While you're waiting, you can peel and cut up the potatoes and turnip and let them sit in a basin of water. You can also get the dumplings ready.
  • After the 45 minutes, add lima beans and cook covered. After 15 minutes, add the potatoes and turnip. Let soup come to a boil again and let it boil for 10 more minutes.
  • Add corn and dumplings. Add salt to taste. Mommom just sprinkled it in but it was approximately 2 teaspoons. Just add it until you are happy with the taste.
  • Let this boil for 5 minutes more and then turn off the burner and serve with biscuits. Mommom never stirred the soup during the whole process.
Hot Vegetable Soup

3 Tablespoons shortening
1 cup flour
1/2 teaspoon salt

Mix ingredients with enough water to make a proper dough and roll out to approximately 1/4 inch thickness. Cut into 1 inch squares.
